Weekly Eats: 2

Good Tuesday morning!

I planned to share my weekly eats with you yesterday but ended up taking a sick day because I woke up with a pulled neck and shoulder. Ouch. Does that happen to any of you? I couldn’t rotate my head to the right and most of my day was spent with a heating pad, in bed horizontal. It feels a bit better today but I will be taking it easy..when all I want to do is take all the workout classes..boo.

Storm Jonas impacted our meal plan this week haha, that feels like a dramatic statement but grocery deliveries scheduled to arrive over the weekend were cancelled. Really, no biggie, we live walking distance from a few nice, small markets so we snagged dinner ingredients before cooking Sunday and last night. It made me feel a bit European just buying one meals worth of supplies haha. Luckily groceries and Blue Apron are scheduled to arrive today.

Sunday: Breakfast for dinner – because it was easy! Sautéed mushrooms, roasted brussel sprouts, roasted Japanese sweet potato wedges and a fried egg.

Monday: Chicken stir fry served over white rice, mix in’s included bok choy, red onion, mushrooms and green beans. I made a quick Asian marinade with soy, sesame oil, fish sauce and honey.

Tuesday: Blue Apron, Creamy Lemon Linguine

Wednesday: Blue Apron, Shrimp and Pineapple Fried Rice

Thursday: Blue Apron, Chicken and Sage Biscuit Pot Pie

Friday: We have happy hour with friends..I am sure we will grab a casual bite out after drinks.

Saturday: Wherever the day takes us!

Fertility Fun: Part 1

Hi there, it’s been a pretty chill day, as all Sunday’s should be. While most of this snowy weekend has been incredibly relaxing, I had an anxiety episode today. Recognizing what triggers these intense emotions is a full-time job guys.. yet all morning I could feel “it” brewing.

The trigger was related to my fertility, or lack there of, a tough topic to casually talk about honestly. Here’s the thing, I feel like I’ve encountered numerous other ladies in their upper 20s and 30s that have experienced fertility issues. Sharing my past and progress may benefit you, and perhaps it will lead me to the happy ending I am hopeful for.

High School Days: Ah yes, where the story begins..WAY WAY back :). I was a late bloomer, so my period didn’t begin until I was 16. I was totally fine with it, I danced and cheered, and not having to deal with a pesky period was a relief. I was petite but even then, my period only occurred 2-3 times a year. My doctor wrote it off because I was active, a gymnast, and had low body fat. But once I started competing for cheerleading more frequently, I wanted to know when my period would arrive (surprises aren’t fun in front of hundreds of people)..so I started on birth control at 17.

College Days: I kept taking birth control through most of college, except during one summer (when I was 21) when I thought a break from the pill was due. My period didn’t arrive during my four month hiatus. I notified my doctor and she wasn’t concerned..a few months later I got back on the pill. I tried a few different pills through the years – Nuva Ring, Loestrin, etc.

Working World: I started getting nasty migraines after my 27th birthday, I was taking far too many sick days and couldn’t figure out what the cause was. I went to a few different doctors and finally decided to quit the pill for good. I was in a committed relationship, and my boyfriend (future hubs) encouraged me to do whatever it took to feel healthy again. A few days after I stopped the pill I felt better and after a few weeks,  my headaches were nonexistent. I couldn’t believe quitting the pill did the trick.

A few months passed, then six, then a year..and I got rather nervous about my period’s absence. My lady doctor ran a number of tests, including an internal ultrasound (ouch) and the diagnosis came back as “PCOS Lean”. Her recommendation was to wait until I’m ready to conceive, and then start intense doses of hormones to try to stimulate my period. She also emphasized that the sooner I start, the better my chances will be…no pressure..(tick tock, tick tock goes the biological clock)

This diagnosis didn’t satisfy me, it felt like a band aid. Why isn’t their a way to naturally bring my period back? What happens if I just wait and the hormones you prescribe don’t work?

Snow, snow, and more snow

Happy Saturday lovelies. Hopefully you are staying warm, especially to my fellow east coast residents… the snow has NOT stopped today.

snowy bootsWe had grand plans to visit friends in Connecticut today but with the storm Jonah madness, we opted to stay in town and hunker down. Being Texans (where snow doesn’t happen too often), we were concerned about businesses being open today, so we swung by Whole Foods after our workout date last night. Full review heading your way soon about our experience at Circuit of Change.

snow bunyThis morning consisted of cooking an epic breakfast scramble with kale, fried shallots, prosciutto, avocado and eggs, baking oat bars, and relaxing. We ventured out to tromp in the snow around 1 and were thrilled to see our favorite local ramen spot open. NYC folks, Jun-Men Ramen Bar has the best spicy ramen in town! *If you can handle/enjoy spicy..I’ve noticed our palates are a bit more accustomed to spice then our fellow NY friends.

On the agenda for tonight..a feast of turkey chili with sweet potatoes..hubs doesn’t care for beans, so I selected this paleo chili recipe. Plus a delicious looking brownie recipe, because it’s Saturday and flourless chocolate desserts are my favorite – the denser, the better. Let’s not forget a glass of wine and a movie..a snowy night in is perfectly fine with me.

I realized just now our day seems to mostly be about food :)..I almost forgot we tackled a quick workout in our apartment gym to avoid hay fever before dinner. I did a quick treadmill interval blast and a deadlift sequence. I will share it with you all in my weekly workout post Tuesday.

In other news, apparently their is a snow boot bandit on our floor, love passive aggressive notes lol.

Helping of Happy: Part 1

Wednesday..the day of the week where Friday finally feels reachable and despite the ongoing struggle to stay on top of work tasks..a few are checked off the ever-growing list. Sound familiar? I admittedly have a flare for the dramatic, but my mood and outlook always improve substantially by hump day.

Also, if you read my first post, I’m making an effort to highlight my journey to achieving and maintaining happiness. To help remind me of all “the good”, I will share fun finds, memories, products and bits of advice that lift me up on a weekly basis.

I am sure I will dread future snow-filled days..specifically when I “commute to work”..  but Sunday I was thrilled to be able to play in the snow en route to yoga.first snowThe book Furiously Happy by Jenny Lawson, do yourself a favor and add this book to your reading list. I’ve been portioning small chunks and read them when I need a laugh and escape from reality.so happy

This thai cucumber salad I pulled together randomly to bulk up our dinner last night. Impromptu recipes that turn out well always makes me feel a sense of accomplishment.

I think I am a bit late to the party on this one but the HGTV show Fixer Upper. Maybe its because its set in Texas, or because the Joanna and Chip are adorable..but whatever it is..hubs and I both enjoy the show!fixerLast, but certainly not least, a phone date with one of my lovely lady friends, Jaclyn! We easily gabbed for thirty minutes about her wedding festivities (sooooo pumped!)..knowing I have at least three friend and fun-filled weekends coming up this year brings me so much happiness! weddinnnng

Weekly Workouts: 1

Happy Tuesday!

I had yesterday off work (it was glorious!), so today feels more like a Monday for sure. Here’s a peek at my exercise schedule from last week – I am definitely enjoying Class Pass!

Monday: BFX barre. This was the perfect Monday class, not too intense but a good core blast and the teacher, Rachel, was great with form cues.

Tuesday: The hubs encouraged a light workout in our apartment gym..I had to be pushed a bit but was glad to shake out my legs after a long day of work. I watched the State of the Union and cruised on an elliptical for nearly an hour.

Wednesday: Nada.

Thursday:  Flywheel 45. The instructor was high energy and the playlist was perfect..love when the stars align. I was glad the arms segment isn’t part of the 45 class structure,  I don’t see a ton of benefit from spastically lifting one pound weights for a few minutes.

Friday: Kore with the hubs.  Interval training in a dark, small studio – not my favorite class structure (it felt chaotic and unorganized) but Saturday I was hobbling around, so it was effective.

Saturday: Rest, glorious rest! After checking my iPhone health app, I still clocked eight miles!

Sunday: Yoga at YoGanesh..I was hoping for a yin yoga/deep stretch class but it ended up being more of a nap then haha.

Weekly Eats: 1

Hi friends, hope you had an enjoyable weekend..we had our “first snow” and admittedly frolicked a like little kids yesterday.

Here is a peek of our menu for the week – note, lunch for both of us varies so I won’t include those meals.

Sunday: Out! After a late  yoga class, hubs and I walked to a casual grab and go restaraunt in Koreatown and made  hot boxes of goodies – mine had a seafood pancake, tofu, cucumber salad and glass noodles.

Monday: Buddha bowls, my first attempt at making these at home, I plan on incorporating quinoa, roasted brussel sprouts and sweet potatoes, wilted kale and topping it with a fried egg and avocado plllluus siracha or ketchup. Condiments elevate meals from good to amazing in my book.

Tuesday: Asian turkey meatballs, leftover quinoa, carrot “fries” and spinach with shallots.

Wednesday: Paleo fried “rice”, loosely based on this recipe. Cauliflower, chicken, green onions, shredded carrots and bacon mmm.  Hubs actually likes cauli rice, he’s not so keen to spaghetti squash as a noodle replacement though..pick your battles.

Thursday: My first attempt at a tempeh stir fry..any tips? I plan to modify this recipe and add green beans. mushrooms and rice.

Friday: No plans! Usually this means either a dinner out with friends or date night (my fav!).

Saturday: Trip to Greenwich to hang with Alex and Audra, so whatever the crew wants, will be devoured. Excited already!

Well hi there, thank you so very much for stopping by.

I’m Katie, the lady behind Kale Me Katie, a blog that will touch on a variety of topics but will ultimately focus on my quest to happiness. Sound strange? I agree. Yet, maintaining perspective and finding joy in the little things in life can be difficult. Quieting a very loud mind coupled with a history of anxiety means retraining my brain is a task in itself.

On to the fun stuff… I plan to share travel tales, dining experiences, recipes (do you see a theme? food is everything!), work happenings, NYC adventures, fitness and highlight what’s working on my journey to finding balance and happiness.

..and the cliff notes – I relocated to New York City in September for a much needed career and lifestyle change with my better half (AKA the hubs). Transitions are always tough and leaving family, friends and home in Houston, Texas for a studio in Manhattan has proven to be quite the adventure. More details on the move, job, and the hubs can be found in the About section.
